The Taste of Old Books
We recently came across a TikTok of pastry chef Jodi Roca of El Celler de Can Roca who infused his dessert with the taste of old books. El Cella de Can Roca, is Spain’s three-starred Michelin Restaurant where chef Roca has been known to truly create out of this world desserts that take on a new meaning to life imitating art. In this case, he extracts the liquid from old books and infuses it into a dessert, a method called enfleurage, an old perfumery methodology where you extract fragrances from flower petals by transferring them into a solvent, generally solid fat. He uses the extracted liquor to add the finishing touch on this dish which is presented prior to the final course.
Not only are we fascinated by the process and inspiration for this dish, but our curiosity has us pondering what old books taste like.

Binge Worthy Bite: Chef’s Table Legends
Between watching all the different series available online, we are excited that Netflix just announced a new season of Chef’s Table. This upcoming season will be following some of the culinary world’s most influential chefs in a four-part docuseries to celebrate the 10th anniversary of the show. The four-part season will feature chefs: Jamie Oliver, Jose Andres, Thomas Keller, and Alice Waters. These chefs have tremendously influenced the culinary industry through their passion, innovation, and their celebration of food.
